Chocolate Chip Oatmeal Cookies
Preheat oven to 375
1 cup shortening
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 teaspoon hot water
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 cups oatmeal
1 package chocolate chips
1 cup walnuts (optional)
Cream together shortening, sugars, and eggs. Add water and vanilla and mix. Combine flour, salt and soda--then add to creamed mixture and blend in. Add oatmeal, chips and nuts and mix by hand. Drop by about a 1" spoonful on to a greased cookie sheet. Bake for about 10-12 minutes. Makes about 3 dozen cookies.
