Shirley asked if I had a recipe for our homemade Cottage Pie--I usually just throw things together! But this is pretty much the basics:
2 onions chopped
2 cloves of garlic chopped
1 lb ground beef
1 cup sliced carrots
1 cup frozen peas
1 cup sour cream
1 pkg of Pioneer Brand Beef Gravy mix
1 Pkg of Pioneer Brand Pepper Gravy mix
1 1/2 teaspoon of Montreal Steak Seasoning
1 teaspoon of Roasted herb and Garlic Seasoning
2 teaspoons of chives
1/2 teaspoon of black pepper
2 pouches of Idahoan instant mashed potatoes
Saute the onions and garlic with a bit of olive oil in a skillet. Add the ground beef and the spices and brown. Stir in the sour cream. In a separate small pan--make the Pepper gravy according to the package directions--then add it to the beef mixture. Add the beef gravy mix to 1/2 cup of cool water and mix--then add it to the beef mixture. Put the carrots in a microwave safe dish with a little water and heat till tender. Then add the carrots and peas to the beef mixture. Cover and simmer while you make the mashed potatoes. Serve the potatoes in a bowl with the beef mixture ladled on top. If you have leftovers, you can freeze them for a quick meal at a later time.
