Taco Soup

Post by ShirleyC »

There are many different recipes, but this is the one I've always used and many people around here do too!

Taco Soup

2 cans of kidney beans
2 cans of pinto beans
2 cans of whole kernel corn
2 cans of Rotel tomatoes with green chilies
2 pkg. taco seasoning (or nearly 2 packs)
2 pkg. Hidden Valley Ranch dressing or dip mix (I use whatever I have)

Hamburger meat - browned. Probably at least a pound and a half for this many cans of veggies.

Secret ingredient - 1 can chicken broth or beef broth
Then add any other seasonings you like. I usually use a little Tobasco, and I don't use but one can of the Rotel with green chilis. I use a can of diced tomatoes because of my tongue.

You can pour all of the liquids from the cans into the soup. Let it boil for a short while.
Serve with chips, grated cheese, and sour cream.

Now for one person you can make half the recipe, and still have a lot of soup. I didn't use the pinto beans as I like kidney beans better. Plus I'm mostly cooking for one, but there's plenty of soup for me to freeze some.
