This is something my husband loves. I found the recipe in a cookbook given to me by the woman who taught my classes for the last half of the semester when my son was born. It is called Hamburger Casserole. Now mind you, he's not a big casserole eater at all, but he begs for this one.

Hamburger Casserole

1 pound raw hamburger (I used ground chuck)
1 onion chopped finely
1 bell pepper chopped finely
1 cup of raw rice
1/3 cup of ketchup
1 can of cream of mushroom soup
I can Rotel tomatoes & chilies
salt and pepper to taste (I add about 1/2 t salt and am generous with sprinkling ground pepper before I mix thouroughly)

Stir and mix well all ingredients in a rather large bowl. Spray a 9x13 or an 8x8 casserole dish with Pam, then spread the mixture evenly. Bake covered at 300° for 2 hours. I like to remove the cover and allow it to continue baking for about 10-15 minutes to get some color on the top.

I serve it usually as the "meat" along with butter beans, corn, and maybe a green salad.
