Christmas Wreath Cookies

These cookies are a tradition in our house--the kids say it's not Christmas till I make the Wreath Cookies!! :rotflo:

Butterscotch Pudding Cookies

1 pkg (4-serving size) cook-n-serve butterscotch pudding
½ cup shortening
½ cup firmly packed brown sugar
1 egg
1½ cups flour
½ teaspoon baking soda
1½ teaspoons ginger
1 teaspoon cinnamon

Bake on greased sheets at 350 degrees for 5-7 minutes.

Cream pudding with shortening and sugar. Add egg and blend well. Mix the dry ingredients together and add to the pudding mix. Chill the dough for about 1 hour. Make 1 inch balls and lightly flatten with a glass dipped in sugar.


Frosting

½ cup shortening
½ cup margarine
1 teaspoon vanilla
½ teaspoon lemon juice—optional
1/8 teaspoon almond extract—optional
1 lb powdered sugar
1-2 tablespoons milk (can substitute cream or egg nog)

Cream the margarine and shortening. Add vanilla (lemon juice and almond extract). Gradually add powdered sugar. Add milk (one tablespoon at a time—you might not need the second tablespoon) and beat at high speed till the frosting is fluffy.
