Banana-Nut Bread
for Bread Machine
Claudia Blakely’s Version**

Ingredients
(For 1-1/2 or 2 pound Bread Machines)

2/3 cup Mashed ripe bananas (about 2 large bananas)
____________________________________________

1/2 cup Plain Yogurt
____________________________________________

1/3 cup Olive Oil (suitable for baking)
____________________________________________

1 Large Egg
____________________________________________
1-1/2 teaspoons Vanilla Extract, Pure
1 teaspoon Banana Flavoring Extract
1 teaspoon Butter Flavoring Extract
____________________________________________

3/4 cup White Granulated Sugar
____________________________________________

1/2 teaspoon Salt
____________________________________________

1 teaspoon Baking Powder
____________________________________________

1/2 teaspoon Baking Soda
____________________________________________

1-3/4 cups All-Purpose Flour, Unsifted
____________________________________________

1/2 cup Chopped Nuts
(I prefer English walnuts or black walnuts)
____________________________________________


Mix dry ingredients, including the chopped nuts, with a whisk, in a bowl and set aside.

Place wet ingredients into bottom of the bread pan.

Then place dry ingredients over the wet ingredients.

Set the CYCLE on your machine and press START.
CYCLE: QUICK BREAD (BATTER BREAD), OR CAKE

After about 5 minutes of mixing, open the lid and with the machine still ON, scrape any flour residue from the sides of the bread pan with a soft spatula. If your bread machine requires it, press START again to resume the cycle.

At the end of the cycle*, cool the bread in the pan for 10 minutes, then carefully remove the loaf to a cooling rack. Cool completely before slicing.

*I leave the bread in the machine for 5 additional minutes, before lifting the lid, in order for it to brown a little more, before removing it from the machine. After removing the bread, I wrap layer of wax paper around the loaf to keep it moist as it cools.

**Changes made to original recipe: The addition of more sugar (from 1/2 cup to 3/4 cup), of the banana and butter flavorings, and of the chopped nuts. The original recipe is from Great Bread Machine Baking by Marlene Brown.

This sounds so yummy....I've never tried yogurt or the extra flavorings in banana bread. I will! Thanks for taking the time to type this up!
