Mexican Casserole

Mexican Casserole

Brown 1 lb ground beef and drain
Add: 1 can cream of chicken soup
1 can pinto OR ranch beans drained
1 can rotel tomatoes

Combine well and simmer for about 5-10 minutes
In a 9x 13 dish pour a bag(or most of a bag) of Doritos. Pour the meat mixture over and top with grated cheddar or Monterey Jack cheese. Put in the oven at 375 until the cheese is melted.

This can just as easily be finished up as individual servings by putting a handful of Doritos on a plate and spooning the meat mixture over. Top with grated cheese and microwave until the cheese is melted.

Also, the meat mixture freezes well so you can use part now like make an 8x8 dish of the casserole and freeze the meat mixture and later you have a casserole almost done. Just thaw and go from there.
