Roasted Red Beet Salad

6 medium beets
1/2 cup balsamic vinegar
2 Tbsp maple syrup
olive oil
arugula
goat cheese

Scrub and dry beets. Place in foil lined baking pand and cover tightly with foil. Roast in 400 ^ oven for 50 minutes or until kinife is easily inserted in beet. Cool and peel. Dice into 1 inch pieces.
Heat balsamic vinegar over medium heat. Add maple syrup (more to taste) and stir until mixture reduces to just coat back of spoon. Do not overcook. Allow to cool and add olive oil about 1/3 cup,
Place arugula on plate. Top with room temperature beets and goat cheese. Pour dressing over and enjoy.

My daughter and I shared this last weekend. Yummy!!!!!

This looks yummy, putting the beets in the oven sure saves a messy stove top. I always get beet juice steam and spatter all over. I am just the messiest cook! The trouble is, I am the only beet and goat cheese person in this family!
