Chocolate Pie
1 1/3 c. sugar
3 T. flour
3 T. cocoa
Stir together.
Add one egg and blend. Add one stick of butter and one cup of milk. Cook on medium until it starts bubbling and gets thick.
Pour into a baked pie shell. Add cool whip or whipped topping to the pie.

Coconut Pie
Use same recipe as above and leave out the cocoa.
Add one cup of sour cream and half of a 14oz. bag of coconut. Cook the same way. The coconut usually makes a little more filling than the chocolate. I toast some of the coconut in the oven to drizzle on top of the topping.

These pies need to be kept in the refrigerator.

A slice of either of those would be perfect to go with an afternoon cup of coffee, right now!
