GF cornbread dressing

Gluten-Free Cornbread Dressing

1 package Bob's Red Mill gluten-free cornbread mix (not corn meal)
6-8 slices of Food for Life gluten-free Almond-Rice Bread
2 large celery stalks chopped fine
1 medium onion chopped fine
1 carton Chicken Broth or Turkey broth (I used organic)
2 hard boiled eggs chopped
1 raw egg
salt and pepper to taste
rosemary, thyme and sage to taste

Prepare cornbread mix according to package directions. Let cool.
Toast bread slices. I like my dressing with more cornbread taste so I only used
6 slices of bread.

Preheat oven to 350 degrees.

Saute celery and onion in olive oil for about 4-5 minutes just to soften a bit.
You can also boil and drain if you'd like.

Crumble corn bread and bread slices in large bowl. I did not use all of my
cornbread. I used just over 3/4 of it. Add celery, onion, cooked eggs and mix.
Add raw egg. Begin adding chicken broth until bread mixture is moist. I used
nearly a full carton of broth.

Add seasoning to taste. I used roughly 1 tsp each of dried rosemary, thyme and
2 tsp of sage. I didn't have fresh seasonings, but I bet it would have been
fantastic using fresh.

Spoon mixture into large casserole dish. Cover and bake at 350 for approx 30
minutes. Remove cover and bake additional 15 minutes to brown. Oven
temperatures vary so adjust accordingly. Do not overcook.
