GF Blueberry Muffin Recipe

Here's a recipe that I've tried - the blueberry one I think that anyone would think is delicious and not know that it's GF. Sadly, I cannot remember where the Blueberry recipe came from - I found it somewhere online.

GF Blueberry Muffins

Whisk together

1-1/3 cups almond meal (I use Bob's Red Mill Almond Flour)
1 cup sorghum flour (or certified GF oat flour)
1/2 c. tapioca starch or potato starch (not potato flour)
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
3/4 teaspoon xanthan gum
1-1/3 cups brown sugar

Beat in

2 teaspoons vanilla extract
2 tablespoons light olive oil
2 eggs
1/2 cup warm water (you can add another 1/4 cup if needed)
1 teaspoon lemon juice

Beat the batter until smooth. Stir in 1 pint blueberries. (fresh is great, but I usually use frozen because I always have those - place on a paper towel to thaw while you gather ingredients and mix batter, then stir in when thawed)

Line 14 muffin cups with cupcake papers (or grease muffin cups and skip paper). Bake in the center of preheated oven for 25 minutes, until golden and firm to the touch. A wooden pick inserted into the center should emerge clean.

Cool on wire rack for 5 minutes, then pop the muffins out to cool on the wire rack. Cooling in the hot pan will make them soggy.

I freeze these and take one out in the morning and let it thaw while having my coffee. You can microwave to thaw, but don't overheat them or they get sticky an nasty. About 18 - 20 seconds does it.
