I scream for Ice Cream!

I'm on my annual summer ice cream making binge. Today was Strawberry ice cream but what I really love that I made the other day is my coconut ice cream, sort of like almond joy with no almonds and way better

Coconut/Choco chip ice cream

Mix together the following:

1 can Coco Lopez Cream of Coconut
1 can Lite coconut milk, I use Thai kitchen. This is not sweet.
1 can condensed milk
1 cup whipping cream

Blend well and chill overnight in the fridge. Next day put in your ice cream maker till done. It usually takes about 20 minutes for mine.

Midway thru take:

1/2 large bar of Bittersweet Godiva chocolate

Using a sharp knife, chop it into slivers 1/4 - 1/8 inch wide. When the ice cream is done, put a layer, about a third in the bottom of a tupperware container. Sprinklw with a third of the chocolate slivers. (Why slivers? Chocolate chips are too hard in the ice cream. ) Continue layering two more layers of ice cream and chocolate pieces. Cover and freeze a few hours. I promise you will love it.

If you would like to make coconut sorbet, substitute 1 can of coconut water for the cream and leave out the chocolate. Yum!

Omg. Too utterly die for. This sounds terrific. I'll have to look for the coconut things at Whole Foods in DM before we come home on Thursday. DH thinks we are only going to Costco....he did ask me today what we were shopping for. Food was the reply, now, Bunny, I have a venue!

Thank goodness, I don't own an ice cream maker. :rotflo:

I will, however, share these with my DD, as SHE has one! Maybe I'll get a taste???

This icecream sounds deeelicious Bunny.
We don't have those brands of coconut milk
and coconut cream and just want to know
what size the cans were. Thanks....Lexie

They are the sizes of cans of basic vegetables, maybe 14 ounces?

Bunny, I made your coconut icecream without the chocolate.
Tried some for lunch today and it was deeelishous.
Thank you so much for sharing. Will try the vanilla icecream recipe next.

Glad you enjoyed it,Lexie. Gotta love those ice cream makers. I enjoy making lots of fresh fruit sorbets, too. so easy.
