Rafferty's Potato Soup

This is a really good rich stick to you ribs soup that almost everyone loves. I thought I would post it for you folks with the super cold weather.

Rafferty's Potato Soup

5-6 potatoes, cubed
1/2 of a diced onion
Boil in enough water to cover. DO NOT drain.
When potatoes are tender Add:
1 can cream of celery(do not sub cream of chicken or cream of mushroom-- It doesn't work-- ask how I know!)
8 oz cream cheese, cubed
1/2 cup of milk
1/2 stick of butter

When the butter is melted and the cream cheese is melted serve with any or all of these : grated cheese, bacon bits ,croutons.

If I think I have too much liquid in my potatoes I reserve the liquid instead of throwing it away in case I need to add it back because yo udo need some liquid.

I love potato soup, will try this one soon. Wonder if you could boil some fresh celery with the other stuff? My celery seems to get thrown away before I can use it all.

I'm sure the creepy would be a nice addition ,Betty. I can say though not to sub cram of chicken soup. I tried that and it did not work at all.

Not another potato soup-this one sounds too good! Someone mentioned having to throw away fresh celery. Somewhere I read to wrap it in a paper towel (I make sure it's all covered) and then in aluminum foil. I've had it last weeks-may longer.

I always use fresh onion and celery along with a bit of carrot in my potato soup. I don't use canned soup because of the salt and chemicals that are migraine inducers. This recipe sounds terrific with the cream cheese addition!
